Candied Walnut & Currant Relish

I made this to accompany my Maple Roasted Pumpkin & Walnut Soup. It's a simple blend of walnuts in sugar, vinegar, chives, and currants that are bloomed a bit in the mixture.


Enjoy.

Ingredients

  • walnuts 9 oz

  • water 1 cup

  • sugar 1/4 cup

  • powdered sugar 2 T

  • currants 1 cup

  • brown sugar 1/4 cup

  • sherry vinegar 3 T

  • chives, dry 1 T

  • salt and pepper to taste


Method of Procedure

  1. Bring your water and sugar to a boil and blanch your walnuts for 5 minutes.

  2. Drain and toss with powdered sugar.

  3. In a dry saute pan add your brown sugar and currants and cook until the sugar begins to melt.

  4. Add your dried chives and vinegar, then toss

  5. Add your walnuts, and your salt and pepper. Cook while stirring until properly mixed.

  6. Cool and store
