Grounded Earth Broth

I made this as the base of my Grounded Earth Chicken Soup. I was intentionally making a healing soup, one that promotes digestion and helps one regain their appetite after a neighbor of mine was having issues with her chemo therapy.


For this I started with the bones from 2 whole whole chickens, removing the skin to the reduce the fat, and the meat to cook later. For the liquid base, I used store bought bone broth as well as chicken stock. I flavored it with a ton of herbs and spices as well as base vegetables to make the broth itself a meal.


Once the broth was established, I seasoned it with aromatics and spices then strained it to cook the ingredients for the soup. A lot of times I will roast the vegetables while cooking to concentrate the flavor, while poaching it can dilute it. The difference here, is that all of the vegetables that were cooked in the broth helped fortify the broth, so I didn't loose any nutrients from the the vegetables.


I got the base ready to poach in by finishing the base with a couple of sachet d'epices as well as citrus zest and juice. I made sure not to ever get the soup too hot, as cooking at higher temperatures can reduce effectiveness of some of the ingredients. From there I poached off all the ingredients for the soup.


Ingredients

  • whole chicken, skin and meat removed 2 ea

  • mandarins, zested and juiced 3 ea

  • lemons, zested and juiced 2 ea

  • carrots, sliced, skin on 2 lbs

  • celery, sliced 4 lbs

  • onion, chopped 4 ea

  • soy sauce to taste

  • bone broth 2 qts

  • chicken stock 2 qts

  • water 4 qts

  • turmeric, whole 4 oz

  • ginger, whole 4 oz

  • garlic, whole cloves 8 ea

  • parsley, whole bunch 2 oz

  • thyme, whole stem 1 oz

  • bay leaves 4 ea

  • coriander seed 2 T

  • fennel seed 1 T

  • star anise 2 ea

  • cinnamon stick 2 ea

  • black pepper, whole 3 T

  • Szechuan peppercorn, whole 1 T


Method of Procedure

  1. Remove your chicken from the carcass, and cut off extra skin.

  2. Add all of your ingredients and bring to a simmer, don't let it hit a boil, but just a gentle simmer.

  3. Simmer the broth for at least 4 hours, the turn off and let cool enough to strain.

  4. Strain the broth, discarding all the ingredients and use for my Ground Earth Chicken Soup.
